Green chili is ez. Just brown some pork shoulder cubes in a pan. Add to Crock-Pot and add chopped onion, chopped and peeled roasted green chilis, 1t dry mustard, 2t salt, and 1t pepper. Cook on low all day. Make a roux with 1c oil and 1c flour. Turn crockpot up and slowly add roux to Crock-Pot and mix. Cook 10 min then serve with tortillas.
