Chicken gnocchi soup is delicious and healthy. Boil a package of chicken breast in half pot of water with half onion, stick of celery and some leaves, salt and pepper til done. Remove chicken from broth and strain into bowl.
Chop 1/2 onion, celery, 1 garlic clove, and a little carrot and add to pot with 3T butter and 2T olive oil and cook for 10 min. Add 1/4 c flour and cook for a couple min then add reserved broth and cook til boiled and thickened.
Add 1/2 package gnocchi, 2 handfuls of spinach and 2T chopped parsley and cook 5min then add 1/2 c milk and 1/4 c cream and season with salt and pepper.
